「紅豆」與「紅藜」,這兩項紅色食品,皆是以屏東為原鄉的產物,而屏科大蔡碧仁教授以其專長從食品守護、保養人身的角度,長期投入研究「穀類紅寶石」-台灣藜(紅藜)之研發,以其食品特性、益處研發而成「紅藜益生菌」、「紅藜代餐包」、「紅藜雪花片」等,讓紅藜發揮本身的價值,並以不同的食品形式讓民眾得以輕易攝取其營養。
紅豆(Vigna angularis)又稱Adzuki bean,是台灣常見的食用豆類之一,其產量以屏東地區最高,經研究發現紅豆除了營養豐富外,還含有許多機能性成分如多酚、膳食纖維、維生素B2、鐵等。惟其生物活性成分易受加工過程中的熱所破壞,蔡碧仁教授解決抗營養因子對營養吸收之影響,並藉此提升其生物活性成分含量研製而成「紅豆寶」,其不僅有豐富的營養成分,更透過特殊加工處理,可進一步有效的釋放更多生物活性成分,並有效提高其抗氧化能力。
產品說明與介紹:
1. 紅藜代餐包:以發芽紅藜及發芽糙米為主,添加豌豆蛋白、燕麥、薏仁、黑豆等。富含GABA胺基酸、穀類纖維與高SOD活性。
2. 紅藜雪花片:以屏東所產紅藜芽、糙米芽與紅豆為主原料,富含胺基酸等營養成分,並保有紅藜風味與營養,適合添加在早餐飲品或甜點中。

Both djulis and red bean are native food materials traditionally used by aboriginal communities in Taiwan. The abundant nutrient made them a good source of health food. It’s been 20years for professor Tsai to maximize the value of djulis and made them into health products. For example, djulis probiotics, djulis meal supplement, djulis snow flake etc., are easy for people to retrieve their excellent ingredient and maintain the body health every day.
As to the red bean (Vigna angularis), the functional ingredients, such as polyphenols and amino acid are quite unstable during thermal processing. Besides solving the problem caused by anti-nutritional factors of the bean, Dr. Tsai further increased their bioavailability through some special treatment, and developed them into red bean powder with high amino acid and antioxidant capacity. 幫身體打下健康基礎-小分子膠原胜肽益生菌

現代人工作忙碌、生活壓力大、用餐時間減少、蔬菜攝取不足等因素,容易發生腸道問題;人體腸道內超過千種菌種,其中有益健康、幫助腸道菌種平衡的益生菌,會隨著不良生活及飲食習慣而減少,因此適時、適量的補充益生菌,不會有依賴性,可以提供可身體多重正面效益。
屏科大生物科技系施玟玲教授,以其醫學與生物科技專業背景為基礎,從小分子易吸收為出發點,研發製成幫身體打造健康基礎的「小分子膠原胜肽益生菌」,採用魚膠原蛋白經酵素水解製程,將原本分子量在30萬道爾頓的膠原蛋白水解至容易吸收的小分子胜肽,已有許多臨床前試驗與人體研究,確認口服魚膠原胜肽對皮膚、代謝與腸道的保健功效。
由法國與日本發表的文獻指出,人體研究以口服方式服用持續8週,對40歲以上女性能增加皮膚含水量、使皮膚纖維母細胞生長及遷移來提升膠原蛋白、玻尿酸與葡萄胺聚醣合成。在體外實驗,魚膠原胜肽能透過廣大的基因調節能力,抑制脂肪細胞分化與油滴形成,在動物實驗,口服魚膠原胜肽能在不減少食量的情況下,抑制內臟脂肪與皮下脂肪的形成而能控制體重,亦能控制高脂飲食誘導之血液膽固醇、三酸甘油脂及血糖增加,亦有減少脂肪肝的效果,顯示對代謝相關症候群的預防與緩解;進一步分離脂肪細胞進行體外實驗,證實服用魚膠原胜肽小鼠脂肪細胞之發炎細胞激素分泌降低。

小葉蕨藻 (Caulerpa Microphysa) (俗稱「海葡萄」),透過特殊萃取方式加工所取得之萃取液,富含多酚及類黃酮等抗氧化物,經研究團隊「安全性測試」及「功能性試驗」,證實小葉蕨藻萃取液具有抗發炎及抗過敏效果,並在國際化妝品成分命名(INCI)登錄,試驗結果同步發表於國際高品質期刊,取得發明與新型專利,使此種臺灣原生海藻具備開發成國際性美妝品潛力及商業價值,現已有數家國內、外廠商接洽商業利用可行性。目前系列保養產品有清爽型精華液、清爽型華乳、極潤保濕面膜與養護舒緩調理洗髮精。

The average molecular weight of collagen is about 300,000 daltons, accounting for about 30% of the total protein in the human body. Caulerpa Microphysa (commonly known as “sea grapes”), the extract obtained through special extraction methods, is rich in antioxidants such as polyphenols and flavonoids. 草本精華漱口水
以適當濃度黃花蜜菜等草類,抽取其純露,並以心葉水薄荷純露取代漱口水中之香水薄荷部分含量,製成草本精華漱口水。
心葉水薄荷止癢膏
以心葉水薄荷精油為主原料,並添加少量的黃花蜜菜、積雪草等草類之純露後製成止癢膏。
茶包、氣泡飲及青草凍

水產深加工與副產物高值化利用整合創新技術

本創新技術分成魚肉冷凍深加工與加工過程產生之副產物高值化利用兩大部分,共獲有台灣與日本發明專利5件,並獲得2021未來科技獎及2020、2021台灣創新技術博覽會金牌獎。
1.冷凍深加工
本技術針對養殖魚類開發深加工製備與製程技術,創新技術分成魚肉與副產物利用兩大部分。魚肉深加工方面,技術涵蓋範圍包括養殖原料魚規格、暫養設計、放血方法、加工製程、急速冷凍,技術設計內容主要是從家庭便利性、安全性與生鮮性開發急速冷凍製程,產品不水洗、不解凍、無腥味,可即取即煮,烹煮全程可以魚不沾手,便利家庭、團膳,且可完全無添加調味之健康料理,且蒸煮炒炸均宜。
2.副產物高值化利用
水產在加工製造過程會產生鰓、內臟、鱗及骨頭等副產物,比例達整個原料魚20-70%,均富含各種人體所需營養成份,受限於技術缺口,主要作為下雜料,附加價值低,也影響魚肉產品競爭力,加工利用技術與設備開發,具產業發展關鍵性之影響。
本創新技術以壓力、溫度與時間三者對物質分子細微化與粉末化原理,開發具魚骨/魚鱗粉末化功能之壓力釜設備,創造副產物高值化,提升整體產業價值,是接續魚肉加工之深加工設計。設備分成升溫、升壓、恆溫、恆壓、時間及記錄控制系統等模組,可完成魚骨/魚鱗粉末化。本項技術開發魚骨粉鈣可達到300,000ppm,可以提供國人優質營養補充來源,並且有效創造養殖產業供應鏈附加價值與競爭優勢。

Fish by-products generated from processing are full of rich nutrition but most of them were used as miscellaneous materials for animal feeding food, sold by very low prices, or evenly discarded. Followed by deep processing for fish meal, a creative autoclave design with a series of heating and pressure technology is developed to powder fish bone/scale. The nutrition components of calcium, magnesium, potassium, phosphorus, zinc, and selenium contained in aquaculture fish powdered bone/scales are extracted.
